Slumgullion

I know, I know. Slumgullion is a tough name to get behind. However, it really is just a long word that means “Meat Stew”.  What are the ingredients? Open your fridge. See those leftover vegetables and meat? Throw it all together and you have slumgullion. Is it breakfast, lunch or dinner? Yes. It is a great way to utilize those garden veggies in the summer and fall. Slumgullion also warms the body on those winter nights and crisp spring mornings. The version I will be sharing is a family tradition. This is our family’s breakfast version of slumgullion. Tomatoes, Peppers, Bacon and more make up one of my all-time favorite meals.

Let’s get started!


Ingredient List

  • 1 lb of Bacon diced

  • 2 Bell Peppers - Any Color - Diced

  • 2 Cloves of Garlic - Diced or Minced

  • 1 Medium to Large Onion - Diced

  • 1 6oz. can of Tomato Paste

  • 1 28oz. can of Diced Tomatoes

  • 2 Stalks of Celery - Diced (Keep leafy tops for later)

  • 1/4 Cup Rough Chopped Parsley

  • 1/4 Tsp. Worcestershire Sauce

  • Salt and Pepper for taste

Optional

There are some alterations or additions you can make to this dish if you are looking for a change.

  • You can add any vegetable that you want to this dish. some of my favorites are Zucchini, Carrots, Jalapenos and Spinach

  • If you have a garden, you can substitute the canned tomatoes for fresh ones. You can even combine them if you want to use both. Just use little less of the canned diced tomatoes. If you can get fire roasted diced tomatoes, they add just another level of flavor to this dish.

  • Any protein goes well in a slumgullion. You can use sweet or hot Italian sausage or steak in place of the bacon. Or you can use all three! Another family favorite is Venison. Just remember to add a fat like oil or butter when cooking lean meats like Bison and Venison.

  • This dish can be eaten as is or over rice. My favorite time to make this is when there are Chinese leftovers in the fridge. Just heat up the rice in the microwave or , if your are impatient like me, leave the rice cold and use it to cool down the piping hot slumgullion.

Cook Time — Approximately 15- 20 minutes.


Step 1

Place your Hallman Originals Cast iron skillet on the stove-top burner and set to medium-high heat. When the skillet is hot, cook the bacon to your preferred doneness.  This recipe has no rules. Like crispy bacon? Go for it! Like chewy bacon? It works too. When the bacon cooks to your liking, remove it from the skillet and place in a bowl lined with a paper towel.    Remove excess bacon grease from the skillet. Make sure to leave enough grease to cove the bottom of the skillet, as we are going to use it to cook the veggies.


Step 2

Place the onion, peppers and celery in the skillet. Cook until the onions are translucent. Add the garlic and cook until fragrant. this usually takes about 30-40 seconds.


Stir in the tomato paste. and cook for about 1-2 minutes. add the diced tomatoes and worcestershire sauce. Do not drain the tomatoes. We want that juice in there. Reduce the heat to medium and simmer for around 5 minutes. Add the bacon back into the skillet and season with the coarse black pepper and salt to taste. Simmer for another 3-5 minutes.

Remove from heat and add your rough chopped parsley and celery leaf and serve.
